It is made both by the traditional winemaking system at a controlled temperature, and by thermo-vinification in the pre-fermentation phase. It is bottled between the end of October and the beginning of November. To preserve its fruity expression to the maximum, the addition of sulphites is limited and it is filtered very gently.
Novell means new in Catalan and it is tradition to try this style of wine from every November 11.
Sant Josep Vins is the name given to the Cooperative winery of Sant Josep in the village of Bot. The winery covers 450 hectares of vineyard, planted mainly with local grape varieties of White and Red Grenache (known here as Garnatxa). The winemaking area around the village of Bot is greatly influenced by the mountain range of Els Ports which clearly influences weather conditions. Sant Josep Vins is a reference point in the D.O. Terra Alta, offering well-known brands such as Llàgrimes de Tardor for example.
