Elaboration
Cold maceration for 6 hours. Fermented in stainless steel tanks during 20 days at 16ºC.
On the nose
Fruity aromas, mainly apple, pear and white flowers. Notes of fennel and slightly aniseed.
On the palate
Good acidity. Fleshy, with a long aftertaste and mineral.
Pairing
White and blue fishes, pasta, rice, white meat, cheeses, smoked and cured meats.
Recommendations
To serve between 6-8ºC.
