Elaboration
Fermentation in stainless steel tank, aged in American and French oak barrels during 15 months. Two years-aged in bottle.
On the nose
Balsamic entry with notes of red fruits, raspberries, cherry, strawberry and ripe plum and at the end hints of toasted.
On the palate
Fleshy, greedy and nice. Persistent ending where highlights vegetable green and ripe fruit, well assembled with spicy notes.
Pairing
In summer, roasted and grilled black pudding all presented on a toasted bread with tomato. In autumn with trotters with a sauce of black pudding and chickpeas.
Recommendations
To serve at 16ºC.
